When I create a database it establishes myself as owner of the database, obviously. Is there a way to set the SA account to be the owner automatically or will I need to run the sp_changedbowner procedure every time?

Create the database while logged in with the SA account.

Valid tip, and the better option to include SP_CHANGEDBOWNER in the database creation script, which will ensure your thing to achieve.
