   I have a 2005 Enterprise Editon SP2 server, I notice that BIDS isn't on there ( I don't know why being it Enterprise), I would like to install BIDS so I can modfiy/edit packages. Should I only have to load the SQL CD run Install and choose the component I want? And is a re-boot required?

   Yes, definitely you can do like this since it is by the end client component and mostly probable you will not need for any restart unless there is a previous installation that it might ask you to reboot server before you start installation
